What's Up Wednesday


1. What we're eating this week...

This week is full of a lot of quick meals & grabbing dinner because of our crazy schedule!  Lately, we've been eating my lasagna

2. What I'm reminiscing about...
This time last year we were less than 30 days away from our wedding day!  We had just celebrated our Bachelor/Bachelorette party
We were visiting the plantation to make last minute wedding plans!
and finishing our house to move in after the wedding!

Love my Women's Health magazine, apple cinnamon candles & my favorite new Essie polish!  In Stitches is the perfect color for this time of year.


4. What we've been up to...

Football games!

Celebrating my brother's birthday!

Working on home projects!

Air show!

Bike rides with my brother!

Date nights with my lovely husband!


5. What I'm dreading...
Nothing right now!

6. What I'm working on...

I'm cleaning out all  of our closets, drawers, etc and it's so refreshing!  I love having a cleaned out and organized house to start the fall season!

Now that cold weather is coming, I'm back to working on inside house projects!  I'm currently working on the gallery walls in our hallways and then once our dining room table arrives I'll be working on that room.  Both are exciting projects that will keep me busy! 


7. What I'm excited about...

I'm SO excited about October!  We will be going on a trip, celebrating our first anniversary, enjoying our first Halloween in our home, our dining room table will be arriving and so much more!  Can't wait :)

8. What I'm watching/reading...
Right now we're watching Blood & Oil, Quantico, Nashville, Scandal, Grey's Anatomy and Law & Order SVU.  We're ready for the rest of our fall shows to start!


Loving this Marie Konto book on organization!  I'm almost finished with it and I'm reading it at the perfect time since I'm working on cleaning out our whole house right now!

9. What I'm listening to...
A little bit of everything right now!


10. What I'm wearing...
I am so excited that it is time for fall clothes!  Bring on the plaid, scarves and boots!

11. What I'm doing this weekend...
Jared is working most of the weekend so I have a pedicure, shopping trip & some more house projects on the agenda! 

12. What I'm looking forward to next month...
Our 1st wedding anniversary! 

13. What else is new...
We just ordered our dining room table!  I can't wait to get our dining room decorated & share it with you all! 
I'm doing the Beachbody CIZE program & loving it!  A dance party every morning is a great way to start the day!

14. Favorite Halloween tradition...

Last year, we were on our honeymoon during Halloween so this is our first Halloween in our home!  I'm so excited to start new traditions for this holiday and see all the cute trick or treaters!

Lasagna

Lasagna The Peacock Roost

Lasagna is one of my favorite comfort foods!  Pasta and cheese and meat sauce...yum.  This recipe makes a 9x13 pan full of lasagna and it's perfect for those colder nights in the fall & winter!


Ingredients
1 box lasagna noodles
8 oz cottage cheese
3 eggs
Large package of shredded mozzarella cheese
1/4 C Parmesan
1 lb ground beef
1 large jar of marinara sauce
Garlic powder

Directions
Brown beef, drain and combine with marinara sauce & garlic powder.  Bring to a boil & then simmer.  In a mixing bowl, combine cottage cheese, eggs, parmesan cheese and 1/2 a large package of shredded mozzarella cheese.  In a 9x13 pan, put a little sauce in the bottom to keep noodles from sticking and then start layering the lasagna.  Noodles, cheese mixture, sauce and then repeat.  I typically do three or four layers and then top the dish with some of the remaining mozzarella cheese.

Bake on 375 for 45 minutes or until lightly browned on top.

3.  Mad for Plaid

Plaid is one of my definite favorites for fall!  I love a good plaid shirt and the plaid tunic from Target I blogged about yesterday is going to be a staple in my closet!  See my Target Plaid Tunic post here.

4. Organization & Fall Prep


To say I've been in clean out & organization mode is an understatement!  I am purging through everything in our house.  Right now I'm finishing up our closets and let me tell you they are looking SO much better!  Why have a closet full of stuff you don't like or doesn't fit?  Sell it, donate it, do anything with it just get it out of your closet & house!
Only a small amount of the clothes that are already gone.  So many more to go!


I'm cleaning out everything else too & hoping that by the end of this month our house will be put back together & completely decorated for fall!

I am in LOVE with my new Target booties!  I bought them in black & taupe.  They are so comfortable and exactly what I was looking for at a great price!  Do yourself a favor and order them now!

I cannot wait for this 80 degree weather to go away so I can live in plaid, tunics, leggings, booties etc.   To say I'm ready for fall weather, clothes, pumpkin and more is an understatement!

Top Ten Fall Essentials Pt. 2: Splurge vs. Steal

It's fall y'all!!  I'm so excited for fall and about the fact that  I am guest blogging for Karli over at September Farm today!  Since today is the first official day of fall I figured what better way to celebrate than with a fall fashion post?!


 I decided to put together my top 10 fall essentials in splurge vs. steal format so I could share options in different price points!  I'm working on cleaning out my closets and only adding specific items for fall that I love!  Hope you enjoy my list!

I love a good tote!  I carry a lot back and forth to work & meetings so a good versatile tote is a necessity.  Both of these totes are great quality but I managed to snag a great Target Cartwheel coupon and ended up buying the Target one!  I have the reversible red & black and love it!

Buffalo Chicken Sliders


Now that football season has arrived, I'm going to be sharing some of my favorite appetizers & tailgating foods!  I love quick & easy snacks for watching the games :)

Buffalo Chicken Sliders are a new favorite at our house.  They are so easy to make and are perfect for just your family or a big group of people!

Ingredients
1 package chicken tenderloins
1 packet ranch seasoning
1 large bottle of Frank's hot sauce

Directions
In your crockpot, combine chicken tenderloins, ranch seasoning packet and about a half bottle of the hot sauce.  Cook on high for about 4 hours.  If you are cooking for a larger crowd, increase each ingredient by the same proportions. 

Serve on Hawaiian rolls with ranch on the side!  Leftover chicken would also be perfect to top a salad the day after game day!

Friday Favorites


Happy Fridayyyyy!!! So excited that the weekend has arrived :)  It's a pretty full one but weekends are always my favorite!

1. Air Show
Last weekend the air show was in Owensboro!  Jared had to work it so I went with the rest of our crew. So fun!

2. The Life-Changing Magic of Tidying Up
If there's one thing people know about me, it's that I LOVE to organize.  Like it gives me a serious thrill.  This book is all about organization & so far I'm loving it.  I'll give a more thorough review in my book review at the end of the month!

3. CIZE

I decided to step up my workouts from just walking & circuits and I decided to order CIZE.  So far I love it!  It's really fun to do and the time goes by really fast!  I've been sore several days but am interested to see how my results look later on in the program.

4. Home Cooked Meals
I love to cook so when Jared requested fried chicken & gravy, I was excited to see if I could manage to do it the traditional southern way since it had been so long since I had.  So what did I do?  Call my granny to review how to do it of course (She's the best fried chicken cook)!  I can say after a big mess in the kitchen, I managed to completely make from scratch fried chicken, mashed potatoes and gravy.  Jared actually suggested I make the gravy from a packet (trying to make dinner easier on me) and although I appreciated it, I swear I think this southern gal about fainted (not really, but I quickly explained to him that southern women do NOT get gravy out of a packet).  I was pretty happy with how it all turned out! 

5. Fall Transition
This weekend I'm going to complete our summer to fall transition in our house.  The changing of the seasons always gets me in full blown cleanout and organization mode!  The addition of the book above has even increased this desire.  I'm hoping by Monday our house is looking like fall, organized and cleaned out to start the new season!
