Weekend Recap

Well obviously I'm a little behind on my blog this week!  I had this recap almost ready to go on Monday but had some issues with getting a few pictures to cooperate plus a crazy schedule to blame!

Friday started off with my Grandfather's Honor Flight send off!  For those not familiar with the program, it provides a free trip for veterans to visit Washington D.C. to see the war memorials.  It is truly a remarkable & wonderful program and we are very thankful that Grandad had the opportunity to experience this very special and emotional trip!

Proud ladies!  Granny did great on sending him off (of course she was used to it after 20 years in the Navy plus his sendoffs then were for a lot longer trip than a weekend!).  I was a little more emotional, anyone surprised?   It's always been him sending me off on adventures not the other way around.  I was so happy for him to be going but definitely missed him!

It was so cool how they had a police & motorcycle escort out of town!  So thankful for all the people who make this experience so special for these veterans.
Jared was doing a landscaping job Friday, but I still found some firefighters to hang out with :)

Friday night Jess & I did the Moonlight Ride for St. Jude!  It was 12 miles around the city.  Funny story: my bike had a cut tire when I got it out of my SUV (still no clue how I managed that!) but thankfully I was able to go borrow my grandmother's!  It was fun but I was definitely sore the next day!

Saturday morning we woke up to find Grandad on the front page!

We had a yummy breakfast and watched a lot of Entourage before spending the afternoon in Evansville!  We ended the evening with some takeout & more Entourage :)

Sunday is where everything changed!  We had a whole day planned but Jared got called in for overtime early Sunday so I had to regroup on my plans!

Beautiful drive on the way to church!

After church, it was time to go welcome Grandad home from his Honor Flight!

Doesn't she look adorable?  She's got this welcoming home celebration stuff down :)  (20 years as a navy wife will do that!)

Luckily, even though Jared had to work they let him come with the firefighters that were there so that he could welcome Grandad home too!  It meant so much to have him there even if it was in work mode :)

So excited to see Grandad!

Grandad getting interviewed!

Later that night, Darlene and I were watching the news & saw this!
Our welcoming party on the news!
Spent Sunday night hanging out with Dad & Darlene! They let me be their third wheel while Jared was working : )

The weekend might not have been exactly what we had planned but it still turned out pretty well!  We have a full week this week but it's full of lots of quality time together so I think that makes it a pretty good one :)

1. My New Bike!
I love my bike :) My awesome husband surprised me at work and brought it to me all put together!  Sooo sweet!  It's yellow and is an older vintage style which I love.

2. Sally Hansen Gel Polish
You've heard me rave about it before and now you can hear it again :)  There are so many cute colors in this polish for summer!  Hands down my favorite nail polish.  Shop the collection here!

Garlic Ranch Chicken & Rice Crockpot Freezer Meal

The other night, I tried out a new freezer meal recipe that I had made and it was definitely a winner in our home!

Ingredients
2 large chicken breasts
1 packet of ranch dressing mix
1 can cream of chicken soup
Minced garlic (to taste)
*White Rice
*Chicken Broth

*added during cooking process

Combine the above ingredients (not including the rice & broth) in a gallon freezer bag and freeze.  To cook, put bag in refrigerator the night before to thaw.  Cook in crockpot for 4-6 hours on high.

When the chicken is done, it is time to add the rice.  I added white minute rice until most of the broth was soaked up and then poured chicken broth in until it looked like the picture above.  At this time, I also added some garlic powder.
Let the meal continue cooking until the rice is tender and has soaked up most of the broth.  Then just stir and serve!

This was a simple & yummy weeknight meal and it will definitely be going into our freezer meal rotation!

June Goals

It's the beginning of a new month which means it's time to share my Monthly Goals!  I love writing my goals down because it makes me focus on what I really want to accomplish each month :)

See my May Goals post here!

1. Landscaping Progress
We made some progress this month.  We've pretty much removed all plants that were in our front or back yard when we bought the house and are preparing to till up all the dirt in the next week and put down rock.  Stay tuned for progress pictures!

2. Continued Growth for TGP
We have seen quite a bit of growth in our business over the past month but we are always looking to grow some more!  Visit our website www.greenpeacockowensboro.com!

3. Continued Exercise & Weight Loss
Still making progress on this front.  It's a challenge with our schedules but I'm just trying to make better choices every day.  It's working slowly but surely!

4. Devotional/Bible Study
I majorly failed at this during May.  I am working on restructuring my daily schedule to allow for more quiet time in the morning to relax and spend some time with God.

5. Read 2 Books
I definitely accomplished this!  I have been reading a lot more now that I joined the public library.  Follow me on GoodReads to see what I'm reading here!

Now, for my June goals!

1. We have pretty much cleaned out all of our landscaping and now we need to till up the dirt & then put down our landscaping paper & rock.  Hoping we can mark this off our to-do list this month!

2. Life has been so busy lately that I want to slow down this month and focus on spending quality time with Jared.  I also want to enjoy being outside together working on our yard, going on our walks, riding bikes, etc.

3. I definitely splurge some but I've been doing well at making healthier food choices and increasing my exercise level.  I want to continue this in June!

4. I am working on doing gallery walls in our hallway and want to make some serious progress on these this month!

5. I want to continue to try to read two books each month.

6.  I go through stretches where I'll do better with this and then epically fail.  I'd like to really work on this in June to be more well rested and to make my mornings less hectic!

7. I am working on a few more organization projects in our home and would like to wrap those up soon so I can focus on our outside summer projects!

Happy June!

Weekend Recap

Hope everyone had a great weekend!  We definitely did, it just went by too fast!

I had been really feeling blah last week so I had my hair done on Friday and that perked me right up :)  If you need a good hairdresser, I highly recommend Shannon at Face Forward, she's awesome!

I also picked up some new beauty products to try this weekend (reviews to come on those soon)!

After work, I went for a walk to start the weekend!  (Also so I would feel less guilty about our weekly pizza night ;) )
Friday was pizza and a whole lot of Entourage and it was awesome!

Saturday started off with a 3 mile walk with Haley followed by a yummy protein smoothie (I made her a believer).  See my recipe here!

After our walk, I helped my grandparents with trimming & shaping up their bushes!  It was hard work but I loved it!  Since I'm in an office all week it's nice to do a little manual labor every once in a while.

Saturday night I went to Mexican with Haley!

Afterwards, I ran some errands to Hobby Lobby & Target and saw this at Hobby Lobby.  Two and a half aisles of Christmas stuff.  I love Christmas but this is just too much.  Stores are ruining holidays by doing this stuff!

These two came by after a family friend's wedding!  How cute do they look?!

Saturday morning before church we spotted this deer in the backyard!

Me and my daddy :)

After church!  Love hanging out with these two!

Sunday was spent with this guy running some errands, grocery shopping & lots of Entourage watching and relaxing!  Weekends with him are my favorite :)

It really was a great weekend!  We've got a pretty great week ahead and I hope you all have a great one too!
