Taco Soup



Ingredients:
1 lb ground beef
1 packet taco seasoning
1 packet ranch mix
1 can corn
1 can great northern beans
1 can Mexican style stewed tomatoes
1 can stewed tomatoes
1 can diced tomatoes
Garlic Powder
Sugar

Directions:
Brown the ground beef in a skillet and mix in half of each seasoning packet. Combine cooked & seasoned meat in a soup pot with the rest of each seasoning packet, corn, beans, and tomatoes. I added just a couple shakes of the garlic powder and a couple pinches of sugar. Cook on the stove for an hour and serve hot. 

I added avocado & cheese to mine when eating it and you could add tortilla chips too!

Apple Fest Weekend

My weekend recap is getting posted a little late this week!  Jared & I are both feeling under the weather and I spent any time not working yesterday laying on our couch :)

Apple Fest weekend is one of my favorites!  I've always loved fall & the Apple Fest and since we're coming up on our first anniversary on Sunday, this time of year brings back so many memories from this time last year!
Friday, I took a 1/2 day off to do some work for our personal business.  We went to check on one of the yards Jared had recently aerated & fertilized!  Look how green it is!  Our process & certified organic compost works SO well it's crazy!  See more about our personal business here!

Friday night we watched our old high school football game!  It was so chilly but we were able to catch up with friends & that's always fun!

Saturday, we ran some errands, watched the Louisville game & went to the Apple Fest!! 


Love my new Christmas sign for our front door!  I still get super excited about things with our last name or my new monogram on them!  After the fest, we took Jared's grandmother a funnel cake, my in-laws came to see our new table & bring us an anniversary gift and we settled in for a relaxing night at home!


Jared's sore throat was already starting so we ran out & got some yummy Orange Leaf  :)  I hate when either one of us is sick but froyo does make it better!


Sunday, I cleaned out closets & drawers most of the day, had lunch with my dad & stepmom and ended the night in some of my favorite comfy pajamas & visiting with my grandparents!  All in all it was a great weekend :)

Book Review

Balancing It All - Candace Cameron Bure

I simply adore Candace Cameron Bure!  She's such an amazing role model for young Christian women!  I feel like if there's something all of us struggle with, it's finding balance in our everyday lives for everything and everyone we care about.  She does a great job of showing how she has found this balance in her life.  I wouldn't say there is groundbreaking information in this book, but it gave me a fresh perspective on balancing my priorities and I loved learning more about their family life!



Silver Girl - Elin Hilderbrand

LOVE. LOVE. LOVE.  I could not put this book down!   This book is about a woman whose husband gets arrested for embezzling millions (think fictional  Bernie Madoff) and must dig into her memories to try to help uncover what really happened and clear her name.  Friendship, romance, relationships and life in general are huge themes in this book and I can't say enough good things about it.  Go read it!



Success Through A Positive Mental Attitude: Napoleon Hill & W. Clement Stone

We started a book club at work and this was our book for the month of September!  It was really dry in parts but had great advice on the importance of having a positive attitude and ways to make that happen in your everyday life.  I definitely found some good tips in this book!  It had great ideas for how to be more positive in each area of your life.



The Life-Changing Magic of Tidying Up - Marie Konto

Just call me the organization girl :)  I love to organize!  Drawers, schedules, budgets, you name it!  The title of this book drew me in and I knew I had to check it out at the library!  There are parts of the book that are a little odd to me (talking to your clothes & possessions...not happening in The Peacock Roost) but she really did have some great tips!  I was already cleaning out all the closets and storage in our house and this book gave me the boost to toss anything we don't use or doesn't bring joy and never look back!  If you need to get your mind in clean out mode, this book should do it for you! 

I'm currently reading The American Heiress & Dancing Through Life and will share my reviews of those in my next book review!  If anyone has read something great lately let me know so I can add it to my to read list!

Friday Favorites

Happy Friday!!! So glad it's the weekend :)  I'm only working a 1/2 day today (yay!) and am ready for the next few hours to fly by!

1. Dancing Through Life

I'll talk about this book more next week during my book review but I am almost finished with it & love it!  I adore Candace Cameron Bure and her books are so refreshing and encouraging for Christian women of any age!  LOVE her!

2. New Furniture!!

We finally ordered our dining room table & we love it (minus the hideous fabric on the bench, that will be getting replaced ASAP!).  I'm still debating on the placemats & chargers and am looking for napkins, a centerpiece etc.  I'll share photos when I have the final project put together!  Having an actual table to eat at instead of our bar really does make our house feel even more like a home :)

First dinner on our new table!  Chicken Parmesan is a favorite in our house :)

3. Chicken Enchiladas

I love enchiladas!  These are healthy & SO easy to make!  See my recipe here.

4. Fall Clothes & Weather

It's finally feeling like fall around here & I love it!  I've been breaking out my plaid & booties and cannot wait to have fun wearing all my fall clothes!

Chicken Enchiladas



If you love mexican or enchiladas, this recipe is for you!  So easy & yummy!

Ingredients
1 package chicken tenderloins
1 package high fiber tortillas
1 can cream of chicken
1 can rotel
1 package shredded cheddar cheese
1 large can enchilada sauce

Directions
Boil & shred chicken
Combine shredded chicken, can of cream of chicken & rotel in mixing bowl (I leave the rotel out while making half of the enchiladas for Jared and then put it in when it's time to make mine!)
Use a spoon to lightly coat the inside of each tortilla with enchilada sauce.
Put a generous helping of chicken mixture in each tortilla, add a little cheese on top and roll.
Place tortillas in a 9x13 pan until full (normally this is about 6 for us).
Pour remaining enchilada sauce on top and sprinkle cheddar cheese over all the enchiladas.
Bake at 350 degrees until cheese is melted.

I serve mine with sour cream & more rotel on top with a side of spanish rice!  Such an easy weeknight meal your whole family will love (and it's pretty healthy too)!

Friday Favorites


Happy Friday Everyone!  I hope your day is a wonderful as the amazing moisture we are getting outside!:


Yay for Friday!! 


1. Organizing

A definite favorite this week was finishing this book!  (September book review will be posted next week).  I have some free time on my hands this weekend so I'm hoping to finish or at least get close to finished with cleaning out our whole house!  It's so refreshing seeing everything becoming more organized and I can't wait to see the final result!  I was already in organization mode anyway but I found some really great tips in this book that are really helping!


2. Shopping with Darlene
My shopping trip to Nashville with Darlene last weekend was a definite favorite this week!  See what I found here!


3. Gossip Girl


I've been binge watching Gossip Girl and I totally forgot how addicting this show is!  SO good! I have less than 20 episodes left.  Anyone have a recommendation for what I should binge watch next?


4. Divine Triple Chocolate


If you are looking for a low calorie/weight watchers point snack look no further!  I bought these at the grocery this week & they truly are divine :)  I know I've been a little radio silent on the fitness updates the past few weeks but look for those to return next week!

5. bareMinerals

I just purchased the bareMinerals starter kit to try!  Does anyone else use it?  I have used Jane Iredale before but it was a lot pricier.  I have been unable to find a liquid makeup I love so I decided to try another powder makeup!  Any favorite products from the line?

Buffalo Chicken Dip




Buffalo chicken dip is a staple tailgate and football snack in our house!  It's so easy to make, yummy and always a crowd pleaser!

Ingredients
1 Package Chicken Tenderloins
Frank's Red Hot Sauce
Shredded Cheddar Cheese
Ranch Dressing
1 Package Cream Cheese (I use the low fat)

Directions
Boil chicken until done, drain, cool & shred.
In a skillet, melt package of cream cheese and 1 cup of ranch until mixed well.
Pour in 1/3 cup hot sauce (more depending on how spicy you like your dip!)
Mix in shredded chicken.
Mix in 3/4 cup of shredded cheddar cheese.
Pour contents of skillet into 8x8 pan and sprinkle 1/2 cup shredded cheese on top.
Bake on 350 for about 20-25 minutes or until cheese on top is melted.
Serve with tortilla chips & enjoy!
